Middle Eastern Salad with a Rosewater Dressing

1 cup cooked and cooled bulgur wheat

2 cups of peeled strips of fresh carrot & courgette & cucumber 

Handful of pistachios

Handful of dried diced apricots

Handful of fresh mint & coriander 

 

Rosewater dressing:

 

2 x garlic cloves

1 inch piece of ginger 

50ml rosewater 

100ml red wine vinegar 

250ml canola oil 

Handful of fresh mint & coriander

Blend in processor until combined  

 

Mix together salad ingredients together, season with sea salt and dress with rosewater dressing.

 

Serve alongside grilled lamb, chicken or simply enjoy by itself .
